couldn't thaw out fast enough. We usually bake our wings in the
oven, but for this sauce we broke out the deep fryer that hadn't
been used in about 5 years. We followed the recipe that Doug gave us

If you're like me and a wing nut, buffalo
wing lover, chicken wing aficionado, then you are probably
constantly searching for a better wing. Search no more.
Demolition Doug's hot buffalo sauce is it.
Being a
real hot buffalo sauce lover and self proclaimed
aficionado I had tried every place in town...actually probably every
place within 50 miles! I think I've actually tried all the hot
buffalo wings in Virginia Beach and many elsewhere. If they're
on the menu I order them. While some were very good I never
really found a place I could say had a great buffalo wing
sauce. Finally I found a little place a couple miles from
home. (Isn't that the way it always goes. The grass is
always greener somewhere else.) Their buffalo sauce was
awesome. I started telling all my friends about the place
and had them hooked! I had to have them at least once a
week. Every time I invited someone over they would always
say, "Order some of those buffalo wings and we'll pick them up
on the way over." What made them so good was that they were
not so hot that they were inedible (You would perspire when you
ate them though.) and they had great flavor. So many
buffalo sauces are hot enough, but no flavor but pepper & maybe
some garlic. That is why I describe my buffalo sauce as having
"EXPLOSIVE FLAVOR". Hot but very flavorful.

I got to be pretty good friends with the
owner and asked him one day why he didn't market the stuff. He
started complaining about how much trouble it would be. (He
was kind of a grouchy rough character and was always
complaining about something.) When we found out the
place might be closing we started analyzing the buffalo sauce to see
if we could figure out how to duplicate it since he wouldn't hear of
giving out his secret. I was involuntarily "drafted" to do the
actual testing since none of my friends wanted to. They just
wanted the buffalo sauce! After quite a few flops I hit on
something that kind of looked and smelled like that special
buffalo sauce, but it tasted different. It was still good
though. Not great, just good. Friends would always
say it's missing something. We tried to figure out what, then
back into the kitchen I would go. Keep in mind this is taking
place over a few years. I didn't see some of my friends for a
while, but kept perfecting my buffalo sauce. We had a get
together a couple years later and served them what was the
"final" version. They all started raving about it!
It wasn't that "special" buffalo sauce that we started out to
duplicate, but it was still fantastic they said.
As I introduced it to more and more people they became hooked
on MY buffalo sauce! More and more
of them started saying, "This is the best buffalo wing sauce I've
ever had! You should market this stuff".

That's the story in a nut
shell. But, it doesn't end there. I discovered that many
good recipes don't lend themselves to production canning.
So, the next thing to do was to "change" the recipe without
altering the flavor. Easier said than done. It was
another couple of years tinkering now and then before I had
it. Then I decided that maybe I could sell it, but didn't
want to sell it in the conventional manner, that is to say chain
supermarkets. My cousin works for large food
manufacturer and I discovered that you have to pay sometimes
thousands of dollars just to put your product on their
shelves. I had started marketing another business on the
internet and figured out how to get the right people to a web
site. This isn't as easy as it sounds which is why there were
so many dot com casualties a couple years ago. Now I
thought I had the right buffalo sauce and the way I wanted to
market it.
My sauce is available in OHIO
ONLY. Good sauce don't
come cheap, but you'll find that our prices are right in line with
any other "good" sauce on the market. As a matter of fact I sell my sauce in a pint(16oz)
jar and I sell it for the same price as most other premium sauces
cost for a 12oz jar. If you want cheap sauce look elsewhere,
but if you want sauce that will make your taste buds sing then
you've come to the right place. It is hot by most people's
standards (except for those few heat junkies that have numb...or
maybe dumb taste buds) the heat does not over power the
flavor. That's what sets this sauce apart from the rest...the
flavor! I use a special blend of spices as well as some other
ingredients rarely found in hot sauces. So, go ahead and
give your taste buds some explosive flavor!

Doug's Hot Buffalo Sauce is not just for wings either! Try
adding some to a breakfast burrito instead of salsa or
picante. Or just pour a little over your eggs.
Make
your chicken or tuna salad as usual then spice it up with a little
of my buffalo sauce. Spread a little on pizza and add
some chicken for buffalo chicken pizza. Pour a little on your
spaghetti. (This one I haven't tried, but one sauce fanatic
says its great.) My hot buffalo sauce is great on just about any deli sandwich or sub
that uses any meat except beef. (This is my favorite...except
on wings, of course. I love it on an Italian sub!)
A chef friend of mine
paints a thin coat of my sauce on both sides of a tuna steak. Lets
it marinate for a few hours then throws it on the grill. Says
it's the best tuna steak he's had. Baste some chicken breasts 3-4 times while
grilling. Skinless ones work for best flavor.
How about buffalo cole
slaw.! Make your favorite cole slaw recipe and add a little
buffalo sauce. All these ideas have come from people who
have tried my hot buffalo sauce. I'm sure there are many more
uses. Just use your imagination.

Yes, I could be
making all this stuff up. But, do you really think I'd go
through all this trouble just to make $6.99? I actually put
off selling my buffalo sauce for years, but finally after much
annoyance from my wife decided to take the plunge.
It takes more than good buffalo sauce to
make a good buffalo wing. Ever had blubbery
buffalo wings? Yuck! Crispy buffalo wings are
the way to go in my book. But how do you get crispy wings
without breading, batter frying, or over cooking them?...one
word...BUTTERMILK. Yes, you read that right.
Marinate your wings in buttermilk for 12-24hrs after thawing.
Then deep fry at 350 deg. until dark golden brown (8-10
min.) I used to use an electric fryer (these are good for
batches of 6 or less), but I now fry in a stock pot on the stove.. I
found when using the fryer and frying larger batches the oil temp
would drop to less than 250 deg. Not good! Even when
using a stock pot and a gallon of oil the temp still drops from 350
to 290 or so. Just don't fill your pot more than 1/2 full of
oil. (It expands tremendously when the wings are added.)
Invest in a good thermometer. They're less than $10 and are
worth ten times that. Another tip. Use peanut oil for
frying. Unless, of course you have a peanut allergy, then use
canola oil. These oils have high smoke temps and will last for
many batches of wings. To keep your oil clean strain it
through a paper towel after its cool and return it to its original
container.
